Tasty, tasty eats...

If it's Saturday, chances are we're cooking at our house.  Dinner was fried rice, which was enh, but TRex survived her first exposure to tofu quite happily.  She thinks it's cheese, 'cause it come sin cubes.  :^)  I need to acquire a better fried rice recipe, though.

Tonight's cooking was creamy carrot soup (a double recipe) and some bean dip from a Rachael Ray recipe on the back of a Wheat Thins box.  Have I posted the carrot soup recipe before?  I don't remember...
Creamy Carrot Soup  (from memory, so I may be forgetting an ingredient something...)

oil for sauteing
1 lb carrots, thinly sliced
3 leeks (whites only), thinly sliced
1/2 lb white potatoes, quartered
5 cups low-fat, low-sodium chicken broth (could do veggie broth just as easily)
tarrgon
white pepper

Saute leeks in oil until soft.
Add everything else.
Bring to a boil, simmer for 20 minutes or until the carrots are soft.
Purée in food processor or blender, rewarm.

Refried Beans with Tomato and Poblano
1 poblano chile pepper (we used a jalapeño because that's what we had in the fridge)
2 cans (15 oz each) kidney beans, drained
3 T butter
1 small yellow onion, diced
2 cloges garlic, minced
1 can (8 oz) tomato sauce
salt, to taste
pepper, to taste
hot pepper sauce, to taste

Place poblano under hot broiler, blister and char the skin then place in bowl and cover.  Let stand to cool.
Add the kidney beans to a food processor and pulse until mashed.
Heat a large skillet over medium heat.  Add butter and melt, then add onions and garlic. Saute until soft, 6-7 minutes.  Stir in the beans, tomato sauce, salt, pepper and hot sauce to your taste.  Peel, seed and chop the poblano and add to skillet.  Simmer 10 minutes.
Serve immediately with crackers for dipping.
Makes 3 1/2 cups or 28 servings, 2 T dip and 16 crackers each.

Interesting note:  "shit" and "ass" are apparently considered OK for basic cable after 9 pm, but "fuck" is not.  Good to know.  However, whoever is in charge of bleeping Comic Relief is being a bit overzealous... they're killing whole sentences rather than just the offending words.  Makes it hard to just listen to the show while working on the computer.

mmmmmmm Thanks for the carrot soup recipie! It sounds similar to one I used to make in college, then lost the card for.
