Another tasty, easy and VERY FILLING recipe.
Easy Salsa Chicken
3 boneless, skinless chicken breast halves, trimmed
1 c salsa
1 c frozen corn kernels
1/2 large red onion
(1 can rinsed black beans)
I froze the chicken breasts with the salsa after trimming them. (This is a trick that I read on the WW boards or maybe in the recipe swap.) Took them out to thaw/marinate in the morning.
Plopped the chicken and salsa mixture in a square baking dish, topped it with the corn and onion. Baked covered at 375 for about an hour (the thicker chicken bits were still frozen when they went in).
Someone on the WW boards recommends adding the black beans; probably I will try that next time. And some more spices.
I had mine with whole-wheat couscous; the others had it with white rice.
NI (without beans): 198 cals, 2 fat, 3 fiber
