We walked in the door from the train station at 6 this evening and the folks from textile guild were expected around 7. I had some tilapia that I'd defrosted but hadn't decided what I was going to do with it.
3 tilapia fillets
garlic powder, cumin
1 small onion
2 cloves garlic
1/3 large red bell pepper
1 T olive oil
cumin, coriander, tumeric
1/4 c(ish) water
Dust fish with garlic powder and cumin. (I did this part before I actually decided to make it a curryish dish.)
Sweat veggies & spices in oil for a minute or two (in a deepish skillet).
Arrange fish on bottom of skillet with veggies on top, add water, and cover. Cook until fish is flaky.
Start to finish - 10 minutes. We had it with couscous and frozen carrots - the veggie choice could have been better, but it was what was handy.
