We made lasagna this weekend (at TRex's request - "Grandma and Opa at my house!  Eat dinner!  Lasagna!"), and I bought way more spinach than I needed to.  So, as we were cooking, I was pondering what to do with the spinach, and Fran suggested soup.  This was, of course a brilliant idea as I love making soup.  But I had never invented a soup all by myself before.  And so, I present to you, Chicken Spinach Stew.

1 lb boneless skinless chicken breast, cooked and shredded (I did it in the microwave, seasoned w/ garlic powder and cayenne pepper)
1 can (48 oz) low-sodium chicken stock
~24 oz water
1 large summer squash
1 medium zucchini
2 cups baby spinach, coarsely chopped
1/2 cup fresh basil, coarsely chopped
1 large green bell pepper, chopped
1 large tomato, chopped
5 or 6 cloves of garlic, crushed
1 1/2 c brown rice
some oregano
some salt
4 bay leaves

Dump everything in a pot.  Cook until it's done.  ;^)  I actually over-cooked it - it probably needs about an hour of simmering.  My squashes were totally demolished.  This is very thick & stew-y.  You could make it more soup-like by increasing your liquid to other-stuff ratio.

Next time: eliminate the pepper, add carrots & baby bella mushrooms.  And at least twice as much tomato.

It's all based on the ingredient list. There's the list of approved foods (which doesn't appear anywhere in it's entirety as far as I can flipping tell) and if all ingredients are on there, then it's core. Veggies are core. lean meats are core. fat free broths are core. Most condiments/spices (as long as they don't ooze sugar and are fat free) are core.

Gotcha. Well, you could definitely do this with FF broth, though I didn't. And it would qualify as "core". (And of course it doesn't appear in its entirety anywhere. WW are nothing if not hyperprotective of their intellectual property.)

That sounds DEELISH! *sigh* I miss making soups/stews from scratch. :^(

It's all about the kitchen for me. If it's not a comfy kitchen, I won't cook. Guess what kind I have right now? *pout*
