Chicken Spinach Stew

We made lasagna this weekend (at TRex's request - "Grandma and Opa at my house! Eat dinner! Lasagna!"), and I bought way more spinach than I needed to. So, as we were cooking, I was pondering what to do with the spinach, and Fran suggested soup. This was, of course a brilliant idea as I love making soup. But I had never invented a soup all by myself before. And so, I present to you, Chicken Spinach Stew.
1 lb boneless skinless chicken breast, cooked and shredded (I did it in the microwave, seasoned w/ garlic powder and cayenne pepper)
1 can (48 oz) low-sodium chicken stock
~24 oz water
1 large summer squash
1 medium zucchini
2 cups baby spinach, coarsely chopped
1/2 cup fresh basil, coarsely chopped
1 large green bell pepper, chopped
1 large tomato, chopped
5 or 6 cloves of garlic, crushed
1 1/2 c brown rice
some oregano
some salt
4 bay leaves
Dump everything in a pot. Cook until it's done. ;^) I actually over-cooked it - it probably needs about an hour of simmering. My squashes were totally demolished. This is very thick & stew-y. You could make it more soup-like by increasing your liquid to other-stuff ratio.
Next time: eliminate the pepper, add carrots & baby bella mushrooms. And at least twice as much tomato.
